Quick & Delish Whole Wheat Pancakes

Pancakes are a special treat at our house. I started making pancakes from scratch over 20 years ago, following a pancake recipe in the Betty Crocker’s Cookbook. Over time, I modified the recipe to fit the local tastes of our family. While I no longer measure ingredients, here is an approximation of what I include in each batch.

Local flours, fair trade organic sugar, baking powder and salt can all be found in the bulk section of the Moscow Food Co-op.  The Co-op also has a great selection of local eggs.


1 farm fresh egg 1 cup whole wheat Shepherd’s Grain flour (or gluten-free flour of your choice) ¾ cup Organic Valley whole milk or raw milk (see sources below) 1 tablespoon fair trade sugar 2 tablespoons melted butter or non-GMO canola oil 3 teaspoons baking powder ½ teaspoon salt

Where to get local raw milk…Little Bear Dairy’s fresh raw cow and goat milk are available at the Moscow Food Co-op and Hodapp’s Berry & Dairy has fresh goat milk is available at the Moscow Farmers Market or at their farm store at the bottom of the spiral highway in Lewiston, Idaho.

Place flour, sugar, baking powder and salt in a bowl or mixing pitcher. Stir with a wooden spoon till blended. Pour milk into a glass measuring cup (a bowl would work, too). Add the egg. Mix with a fork until yolk is broken and integrated with the milk. Add milk and egg mixture to flour. Add melted butter or canola oil. Stir until combined (do not over mix). If batter is too think, add milk a tablespoon at a time until batter is desired consistency.

Pour or spoon about 3 tablespoons of batter onto hot griddle. When bubbles begin to appear, flip pancakes. Cook until golden on second side.

Serve with butter and maple syrup or drizzle with honey. Or for a special treat, try the apply cider syrup from Hodapp’s Berry & Dairy.

PC Local Foods, Local Flavors blogger, Colette DePhelps, makes extra large batches of these pancakes on Saturday, so her kids can reheat and serve their own breakfast the next day.  She also realized, in the process of writing this blog, that you can get a used copy of Betty Crocker’s Cookbook for $0.74 plus $3.95 shipping.  Which means, you can probably find a copy in your favorite local, used bookstore or thrift store. Definitely worth the investment for some easy and inexpensive recipes! Or, if you prefer online resources, check out the Betty Crocker website.
